One of my favorite treats is fried zucchini coins.
We have an abundance of zucchini growing in the garden.
I have vowed not to let anything in the garden go to waste so I'll be getting a
little creative in the upcoming days.
I made myself a batch of these little lovelies today...
Fried Zucchini Coins
1 Fresh Zucchini from your garden
Crushed Ritz Crackers ( I put mine in a zip lock bag and crush them with a rolling pin.)
Dash of Salt
Slice your washed zucchini into thin coins.
Dip in milk, then flour, then milk again and finally in the crushed Ritz crackers.
Place in frying pan containing about 1 inch of hot oil.
Remove from pan with tongs as soon as they are golden brown.
Sprinkle with a little salt.
